Baby Swiss
Baby Swiss is a semi soft, slightly nutty flavored white cheese with  pea-sized eye development.
                       
Cheddar
Cheddar is hard, smooth, firm-bodied cheese. The flavor ranges from mild to sharp, and the color varies from nearly white to yellow. It is made from sweet, whole cow's milk, either raw or pasteurized.
                       

Colby
Colby, similar to cheddar, is softer with a more open texture than cheddar, with a mild to mellow flavor. It has slightly more moisture  and therefore does not age as well as cheddar.
                       

Colby, Monterey Jack combination [Co-Jack]
A blending of colby and Monterey Jack curd, forming a marbled appearance. Flavor is creamy and smooth and is excellent with ethnic  foods or just on crackers.

Farmers Cheese
A low salt, low fat, semi-soft, white cheese.  It is made with part skimmed milk and has a mild creamy taste.

Pepperjack
Pepperjack is monterey jack with red and green peppers.

                       
Swiss Cheese
A hard, smooth, pale yellow cheese and is best known because of the large eye formation. Swiss cheese has a mild, sweet, nutlike flavor.
